Commandos: Behind Enemy Lines. I loved the standalone expansion Beyond The Call Of Duty as a kid (especially the fifth mission), but it seemed just too hard and too short, so I thought it's best to start from scratch

Thief: The Dark Project (Gold).

Atmospheric and pretty damn hard. Founder of the First Person Sneaker genre, and one of the rare games in the late nineties that had sound and shadows as a critical element of gameplay.
